Civelles à la bilbayenne (angulas a la bilbaína in Spanish and angulak bilboko eran in Basque) are a typical dish of the Basque Country and Bilbao.
The most famous and traditional recipe for preparing civelles is to brown garlic cloves cut into thin strips in a cazuela earthenware dish in a little hot olive oil, if possible extra virgin, then add the civelles and small pieces of chilli (small local green peppers), sliced into rounds.
Cooking is very brief and the dish is served immediately at the table, still bubbling, in the covered cazuela. A wooden fork is used to savour it.
Although it is not the original dish, given the scarcity and high price of civelles, this recipe can also be made at a more affordable price, by making it with gulas instead of civelles.
