Bauernfrühstück (farmer's omelette; in French, "rustic breakfast") is a traditional German dish. It is a hearty and nourishing dish, based on sautéed potatoes, eggs, onions, leeks or chives, as well as leftovers of roasted or smoked meats, bacon or ham.
All these ingredients are mixed in a pan and cooked in the form of an omelette or scrambled eggs. This dish is generally accompanied by a salad of tomatoes or vinegar-pickled cucumbers. Each region has its own way of preparing it. The Berlin variant is the Hoppelpoppel.
Similar dishes are also known in other countries, for example the farmer's omelette (with sorrel), in France, the tortilla de patatas, in Spain or the pyttipanna, in Sweden.
