Calçotada is the traditional way of eating calçots, in Catalonia and Roussillon. Similar to a chive or leek, a calçot is a type of onion cultivated exclusively in South Catalonia and born in the town of Valls at the turn of the century. It is a convivial gathering that takes place between close friends and happens at the beginning of the year, usually at the end of January although the season continues until late March or early April. On the last Sunday of January, you can also attend the Gran Festa de la Calçotada in Valls, the birthplace of the calçots.
