Ema datshi or hemadatsi (in Dzongkha: ཨེ་མ་དར་ཚིལ་; Wylie: e-ma dar-tshil) is one of the most famous dishes in Bhutanese cuisine and the national dish of Bhutan. It is based on chilli (Bhutanese chilli) and yak cheese or cheese sauce; ema meaning chilli and datshi meaning cheese in Dzongkha, the official language of Bhutan.
Different varieties of chilli can be used: green, red and white chillies, which may be dried or fresh. Chillies called "sha ema" are a variety of Capsicum annuum.
Cheese is made from curdled milk of cows or yaks. The preparation method consists of removing fat from curdled milk to make butter. Then, the remaining defatted curdled milk is used to make cheese. After its production, a liquid residue remains that can be used as soup to accompany rice. No part of the curdled milk is thus wasted.
