Gachas (in English: "porridge", "pulp", "purée") are an ancestral culinary specialty of central and southern Spain. A basic food of very ancient origin, this dish has survived in rural areas and in very modest households where it constitutes protein-rich food necessary for performing field work by heads of household, which is why it is considered a rough and harsh dish, the "poor man's dish" or "starve-Christian".
This dish can be consumed without any seasoning (plain and dry) as a main course, called "field dish", originally (plato de campo), or as a dessert perfumed with spices and powdered sugar.
