Kilichi (in French-speaking countries) or kilishi (in English-speaking countries) is a dried meat preparation used in Niger, Chad, Nigeria, Benin, and Cameroon. It is prepared by drying thin strips of meat in the sun, usually beef, but also camel, lamb, and goat. These strips are then coated with a paste made from peanuts and various spices and vegetables, including onion and several spices. The resulting product is then dried again for a few hours in the sun and then roasted for a few minutes over a hot fire. Since the product is neither standardized nor protected, there are large variations in preparation methods.
While paternity of kilichi is attributed to Niger, the specialty is also produced and consumed in neighboring countries (Cameroon, Nigeria, Mali, etc.), notably because of emigration from Niger.
