Osso buco (in the Lombard language oss bus, and literally translated into English as "pierced bone") is a traditional Milanese dish, very fragrant, consisting of a stew of veal shank pieces (or slices), braised in dry white wine and garnished with vegetables (carrots, tomatoes and leeks) which is generally served accompanied by risotto à la milanaise. The marrow is cooked and served with its bone.
In French, this dish is often spelled "osso bucco" by hypercorrection.
