Potatoes (yellow variety similar to the 'Yukon Gold' variety) are cooked in water, then sliced, and topped with a spicy and creamy sauce called salsa huancaína. They are generally served on lettuce leaves and garnished with black olives, corn kernels and quarters of hard-boiled eggs. The sauce is made from white cheese, vegetable oil, local yellow chili pepper (aji amarillo), condensed milk, and salt, all blended together. Some recipes call for garlic, onion and breadcrumbs from salted biscuits.
