Pfälzer Saumagen (stuffed pork stomach of the Palatinate on the Rhine) is a German dish made with pork, sausage meat and potatoes, prepared in the manner of a Brühwurst (boiled and spiced sausage). It owes its name to the Palatinate region and the pork stomach, Sau in German. In the Palatinate, the indication of the origin of the dish is often omitted, and it is simply called Saumagen (pork stomach) and pronounced "saumage" or "saumaache" in the Palatinate dialect.
