Bazeen or bazin (Frenchified as 'bazine or bezine') is a Libyan and Tunisian dish formed of a paste of barley or wheat semolina around which are arranged a spiced sauce, lamb and onions. It resembles Yemeni assida. Bazin is described as a traditional dish and a national dish of Libya. It is also typically prepared in the Sfax region of Tunisia as a festive dish for Eid al-Adha.
Bazin is prepared by boiling barley flour in water, then beating it to create a paste using a magraf, a stick designed for this purpose. The paste can then be placed in a pan and left to harden, after which it is baked or steamed. Salt contributes to the hardness of bazin. Bazin can have a pasty and hardened texture. It can also be prepared using whole wheat flour, olive oil and pepper as ingredients.
