The California roll ("Californian roll") or California maki is a type of ura maki (sushi), generally made with the seaweed sheet on the inside, containing cucumber, crab (or surimi) and avocado and sprinkled on the outside with sesame seeds or tobiko. This type of maki sushi is popular in the United States and its influence is significant in fusion cuisine. In 1973, Japanese chef Ishiro Manashita, at his restaurant named "Tokyo Kaykan" (which still exists in Los Angeles, California), noticed American reluctance to consume makis with the seaweed sheet visible (Nori sheets).
