Dibi — Senegal

Dibi (from Bambara dibidola) is a West African culinary specialty. It is meat — most often lamb or mutton — grilled over wood fire then cut into pieces. The 'Hausa dibi' is further seasoned with a mixture of spices.
Dibi is generally sold in specialized establishments called dibiteries, small shops or popular restaurants where meat is grilled to order and served with onions, mustard, chili or bread. The proprietors of these establishments are sometimes called 'dibiteurs' or 'dibitiers'.
