Medfouna means "buried": in Rissani, at the gateway to the desert, this stuffed bread used to be cooked in a hole dug in the sand, covered with embers. Tourists call it "Berber pizza," which says nothing about its flavor: a thin, pliable bread dough encloses a filling of ground meat or mutton fat, onions, almonds, hard-boiled eggs, parsley, and cumin, sometimes kefta. The Rissani market, one of the oldest in Morocco, sells it late in the morning, piping hot, cut into wedges. At home, a very hot oven stands in for the embers.

Preparation

    Knead the flour, yeast, a pinch of salt, and warm water into a pliable dough. Let rise for 1 hour.

    Sauté the onions, add the meat, spices, salt, and pepper, and cook for 10 minutes. Off the heat, stir in the almonds, hard-boiled eggs, and herbs.

    Divide the dough in two and roll out two 30 cm (12 inch) rounds. Spread the filling over the first, dot with fat, cover with the second round, and seal the edges by rolling them together.

    Bake for 30 minutes at 220°C (425°F) on an oiled baking sheet. Cut into wedges.
