Pasta con le sarde, also named pasta chî sardi in Sicilian, ('pasta with sardines') is a dish typical of Sicilian cuisine recognized by the (Italian) Ministry of Agriculture, Food, and Forestry. Originally, it is a seasonal dish prepared from spring to late summer when the two main ingredients (sardines and fennel) are present as fresh products.
There are many variations. One of the most significant is pasta with sardines alla trappitara, a recipe jealously guarded by maritime families of Trappeto (Palermo).
