Sarmale or sărmaluțe or varză umplută are traditional Romanian and Moldavian dishes. It is stuffed cabbage or a cabbage paupiette, composed of a cabbage leaf stuffed with ground pork and rice mixed with vegetables, onions, and aromatic herbs such as savory or dill.
Sarmale are traditionally cooked stacked in an earthenware pot in a mixture of borș broth and tomato sauce. A brown sauce called rântaș based on flour and onions is often added at the end of preparation. Sarmale are generally served hot with a bowl of smântână accompanied by mămăligă. The term Sarmale also designates vine leaves stuffed, and generally any dish of stuffed leaves.
