Tongseng is a stew of goat, lamb or beef, cooked in a curry with vegetables and sweet soy sauce. It originates from Surakarta in the province of Central Java. The soup is based on a mixture of garlic, shallot, black pepper, ginger, coriander, galangal, salam (a type of bay leaf) and lemongrass, sautéed in palm oil. The shredded meat is then cooked in this mixture. Water is added, then sweet soy sauce and tamarind juice, and finally, vegetables such as cabbage or tomato. Some recipes suggest cooking it in coconut milk. Tongseng is traditionally served with rice. It is a dish similar to gulai, the major difference being the use of soy sauce in tongseng.
