Çılbır is a Turkish dish made with poached eggs and yogurt (often mixed with garlic). Traces of çılbır consumption by Ottoman sultans can be found from the 15th century onward. It is now common to serve the dish topped with melted butter infused with Aleppo pepper, which can be replaced with paprika. In several Balkan countries such as Bosnia and Herzegovina, Montenegro and Serbia, the Turkish word çılbır is rendered as čimbur and refers to a dish of fried eggs.
