Menudo (in Andalusia) or callos a la andaluza (in the rest of Spain) is a culinary speciality made of tripe (callos) typical of Andalusian cuisine. Unlike other tripe dishes in Spanish cuisine, this dish uses chickpeas in its preparation, which is why it is sometimes called: callos con garbanzos. It is a winter dish that is served hot, traditionally in an earthenware pot. It is also called menudo gitano ('gypsy tripe') because it is one of the characteristic stews of gypsy cuisine.
