Krachel are Fez's brioches: round, egg-glazed, sprinkled with sesame, they smell of anise and orange blossom. They can be found at the bakers of the medina from late afternoon onwards, still warm, to go with mint tea or a glass of milk.
The dough is enriched with butter and eggs, and the flavour comes from anise and sesame seeds kneaded into the dough. They are eaten plain, or cut in half with butter and honey.
Preparation

Dissolve the yeast in the warm milk. Mix the flour, sugar, salt, anise and sesame. Add the eggs, milk, orange blossom water, then the butter. Knead for 10 minutes.

Let rise for 1 hour under a cloth, until doubled in size.

Shape into 60 g balls, place on a baking tray, and let rise for 45 minutes.

Glaze with egg, sprinkle with sesame and bake for 18 minutes at 180°C (350°F).
