Tavuk göğsü (tavukgöğsü, (pronounced: taˈvuk ɟøːˈsy), "chicken breast") is a Turkish dessert (milk pudding) made with chicken. It became one of the most famous dishes served to Ottoman sultans at Topkapi Palace and is today considered the "signature dish" of Turkey. The traditional version is made with chicken meat, preferably freshly slaughtered capons. The meat is softened by cooking and prepared in fine rillettes; it is mixed with milk, sugar, rice and cinnamon.
