Osban (in Arabic: عصبان; pronunciation: [ʕɔsˁbɛːn] or [ʕusˁbɑːn]) or osban el kerch, or simply osbana, is a Maghrebi culinary specialty, based on stuffed tripe that is found in Algerian, Tunisian, Moroccan and Libyan cuisines.
The tripe (generally of sheep) is stuffed with rice, ground lamb meat (including liver and heart), chives, tomato, aromatic herbs and spices. It is generally served at Eid al-Adha or for special occasions, as an accompaniment to a main dish, mostly couscous, and sometimes with rice and other starches.
