Khao kha mu (Thai, literally 'rice with pork leg'; Chinese, pinyin: zhū jiǎo fàn), or sometimes simply called kha mu (ขาหมู), is a popular Thai dish. It is influenced by Chinese cuisine, particularly Teochew cuisine.
The Khao kha mu is an individual dish composed of pork leg stewed in a condensed hot broth (some recipes are mixed with cocoa powder or boiled peanuts), then it will be sliced thinly and garnished with steamed rice. The dish is served with salted half-spicy eggs, small pieces of pickled mustard leaf leaves and sometimes blanched Chinese broccoli with fresh chili and garlic cloves alongside. Sometimes, it is eaten with a clear broth. The accompanying sauce is most often composed of yellow chili peppers, garlic, granulated salt, lemonade and vinegar.
Khao kha mu is a food that can be found online, in street stalls, in food courts of large department stores and in luxury restaurants.
By asking for a "kawki" (ข้อกิ) you will get a large round cut from the part just above the pork leg, the joint.
In Bangkok, there are many famous khao kha mu restaurants in various neighborhoods such as Bang Wa, Phlapphla Chai, Mo Mi, Sam Yan, etc. Some restaurants in Bang Rak received the Bib Gourmand award twice in the Michelin Guide 2018 and 2019.
