This Moroccan-style barley soup is a simple, comforting dish that brings together wholesome ingredients and warm, traditional flavors. Made with tender barley, ripe tomatoes, onion, fresh cilantro, parsley, and celery, this soup is gently seasoned with ginger, turmeric, black pepper, and a touch of olive oil. The combination creates a flavorful broth that is both light and satisfying.
The preparation is wonderfully simple, making this recipe perfect for a homemade lunch or a cozy family dinner. The barley is briefly soaked in cold water before being added to the pot, allowing it to cook more evenly. Meanwhile, the vegetables and herbs simmer together with tomato paste and water, creating a fragrant base. Once the barley is added, everything cooks until the grains become tender and absorb the delicious flavors of the broth.
This hearty soup is especially enjoyable when served hot and fresh. It is an easy recipe to prepare with everyday ingredients and is a wonderful way to enjoy the comforting flavors of Moroccan home cooking. Whether you are looking for a light meal on a cool day or a nourishing homemade soup to share with your family, this barley soup is a delicious choice.
